Multifunctional lactic acid bacteria from sugarcane juice with probiotic properties for gut adaptation, health benefits, food preservation and quality enhancement

Researchers isolated four lactic acid bacteria from sugarcane juice and assessed them through a safety-to-application framework. Strains (notably SCJ28 and SCJ29) showed strong simulated gastrointestinal survival, strain-specific antimicrobial/antibiofilm and antioxidant activities, up to ~3.8 log10 reductions in food microbial load, EPS production and milk-coagulating properties, while antibiotic-resistance origins require genomic follow-up.

Why it mattersIn fish biopreservation trials, filtered LAB supernatants reduced microbial load ~3.8 log10, extending shelf life.
